This Moorish army has always done well for me in open field.
The mangonels providing heavy killing power from above, the long ranged desert archers supporting from afar. The camel gunners smashing enemy morale to pieces with their guns, and scareing away those pesky knights with the camels. The granadines mounted crossbowmen to keep a steady and powerfull rate of fire.
The mounted christian guard to flank the enemy.
Hashashim, Dismounted Christian Guard and the Dismounted Arab Cavalry to form the line and of course, the general to keep morale up when things tend to go bad.

You can always replace some of the units in the army with mercenaries. For example, the dismounted arabs can be replaced by the great andalusian spearmen, or replace the mangonels with ribaults/rocket launchers (I do not recommend this btw, the mangonels are absolute killing machines with those exploding barrels).
