The best way to beat the Franks is to bake them in their own armour as they chase you about the desert with futile abandon. The idea is you start the battle with the skirmish troops quite some distance ahead of the main force to encourage the enemy to charge early and tire quicker in the hot sun. Use your cavalry to block their cavalry only temporarily while foot troops can get a safe distance. Don't engage in prolonged melee.
